Pickling isn't just for preserving large amounts of summer's garden veggies, it's also a great way to make foods stand out with unusual flavor combos. Join Halo Perez-Gallardo to stretch your palette in this fun and approachable workshop on Friday, May 17, from 6 to 8 p.m. Participants will experience a hands-on approach to pickling and get a chance to experiment with bold, tropical flavors. Seafood lovers will pickle beautiful wild shrimp and vegetarians will pickle locally cultivated mushrooms, pulling from methods showcased in the restaurant's first cookbook “Please Wait to be Tasted.”

Halo Kaya Perez-Gallardo is the chef-owner and creative director of Lil Deb’s Oasis in Hudson, New York. Raised in Queens by three Ecuadorian women who kept a busy kitchen and instilled in them a curiosity and passion for food, Halo began their career by founding the pie company Saborines, named after their grandmother. In 2016 they co-founded Lil’ Deb’s, and have steered the James Beard-nominated restaurant into being a bastion for queer community and beauty. They co-wrote the cookbook “Please Wait To Be Tasted”, published by Princeton Architectural Press in 2022, which was nominated for a James Beard award.
